Eggplant stuffed with canned frigate mackerel

We will nedd canned frigate mackerel to fill the eggplants that we employ. We also need, onion, tomato. thyme, garlic, salt, ingredients to make a bechamel sauce and cheese to melt.
Will cut the eggplants in half, emptied halves, cut into cubes and meat, will poach with the onion, thyme, garlic, and tomatoes, which will be the last thing you add.
When everything is poached, we went through the food mill and the resulting cream mix it with the sauce. We will get a thick sauce.
To fill the eggplant halves first put on the bottom frigate mackerel fillets, and complete with sauce, cover everything with the cheese to melt, and put in the oven. If we want to stay crust at the end of cooking eggplant, switched to grill.
As always we can use olive oil for rehashing preserves.
One suggestion, make a part with frigate mackerel and one with mackerel, and check the differences.
